This week’s special breakfast was made on Friday, rather than Saturday. I have been craving pancakes for a while now so on Thursday, I added the ingredients to my shopping list and made sure I was prepared.
I finally managed to get vanilla essence which has been out of stock for weeks. This week’s special breakfast saw us having blueberry pancakes with greek yogurt, croissants and fresh fruit. I made the pancakes with mashed banana, greek yogurt and rolled oats – a recipe I used to love but haven’t made in a while.
The recipe said that the mixture would yield 6-7 pancakes but I only managed to make 4. I think I’ll double the recipe next time (although the pancakes are rather filling!) Unfortunately, I left my maple syrup at James’ dad’s house so I had to have honey drizzled on my pancakes. It wasn’t bad but it definitely wasn’t as good as maple syrup.
