Food is one of life’s greatest pleasures and anyone who knows me knows what a big foodie I am. This is why I enjoy sharing my meals with you! Here are my most recent dinner time meal ideas.
Sharing what I eat on my blog can sometimes feel hypocritical towards the body positivity message that I support. Quite often, people look at what other people are eating because they want to look like them or they believe that the other person is morally superior because of their food choices. I know I’ve done that a LOT in the past. However, sharing what we eat is a great way to try new recipes and to keep practising intuitive eating. Listening to our bodies when it comes to food is so important for the body and mind!
Dinner time meal ideas
Prawns with roasted peppers and fluffy rice
This recipe is from Hello Fresh and this week was the first time that we tried it. It includes a fresh chilli but the great thing is that you can choose how much you want to include. I’m a 3/10 when it comes to spice so James put very little chilli in our meal. The flat leaf parsley gives this dish a fresh herby flavour!

Sushi and salad
I have to confess that we had this for lunch however, sushi can be made easily into an evening meal. Include more pieces of sushi, throw some vegetables into your salad such as peppers and sweetcorn and enjoy with a side of crusty bread and butter. Yum!

Fusilli in a homemade tomato sauce with peppers, courgette and spinach
Usually I would wilt the spinach in the pan with the sauce and other vegetables however with this meal I left the spinach uncooked and used it as a salad bed for the pasta. I season my tomato sauce with oregano and basil and it’s my favourite sauce to whip up if I’m low on ingredients.

Chicken and quinoa with buttery leeks, courgette and feta
This Hello Fresh recipe can be made with either chicken breast or chicken thighs (my favourite is with chicken thighs) and I love how soft and buttery the vegetables are. It’s comforting to eat without leaving you feeling stuffed and the basil dressing gives a wonderful flavour.

Old El Paso Crispy chicken fajitas
James and I love a fajita night. The fresh salad wrapped up with crispy chicken is a tasty summer evening meal to share. I love that everything is displayed on the table and we can help ourselves. It’s also super easy to make!

Homemade breaded fish and chips
We love a battered fish from the chippy but sometimes we fancy fish and chips without all the grease. Homemade breaded fish is so easy to make using egg, flour and breadcrumbs – for this meal we used fresh fillets of haddock. Although we’re happy to make homemade wedges, we also love oven chips straight from the freezer to the oven and of course you can’t have fish and chips without peas!
