It’s been a while since I last did a recipe post so I thoroughly enjoyed putting this together for you all. This is my mum’s recipe for carrot and coriander soup and it’s super simple to make! I had to faff around with the camera and lighting to get the pictures but I bet you could whip this up in around 30 minutes if you’re a quick chopper!
This recipe has 5 main ingredients plus pepper and butter:
- 8 carrots
- 1 large onion
- a handful of fresh coriander
- a pint and a half of vegetable stock
- a teaspoon of Worcester sauce
Chop up your carrots and onion. Put a generous knob of butter in the pan and add the onion. Fry for a couple of minutes and then add the chopped carrot and fry for a further 5 minutes.
Then add the vegetable stock, Worcester sauce and some pepper. Bring to the boil, cover and turn the heat down to simmer for 20-25 minutes until the veg is soft enough to blend without overcooking.
Add the fresh coriander and blend until a smooth consistency. And that’s it!
