HelloFresh: Mushroom and broccoli gnocchi.

This week I decided to make something I hadn’t had in a while. A mushroom and broccoli gnocchi dish that is creamy and full of flavour.

It’s so quick and easy to make and my favourite part is that you can wash up as you go along! It’s also full of fresh ingredients (I only cook for myself so the amount of veg seems quite sparse) and still tastes just as good the next day!

Broccoli, mushroom and the gnocchi are your main ingredients but they’re also accompanied by garlic, onion, fresh parsley, veg stock, creme fraiche and hard italian cheese.

I began by sauteing my mushrooms, followed by the onion and then the garlic. In the same pan, I added some veg stock and let it simmer for about 8 minutes. Meanwhile I boiled some broccoli in a separate pan for about 5 minutes (don’t over cook it or you’ll lose all your nutrients AND the texture!) and pan fried the gnocchi in another separate pan until golden brown. I added a couple of heaped tablespoons of creme fraiche to the first pan with the mushrooms as well as the chopped parsley and a few grinds of black pepper.

I then tossed in the broccoli and the gnocchi and allowed it to sit and cook for a few more minutes to give the flavours a chance to merge (and also give myself a chance to do a bit of washing up!)

And voila! A delicious, homemade meal, full of veggies and flavour! It’s such an easy recipe to follow and makes enough to have for lunch the next day – win-win!
