Nachos have been on my favourites list for a long time. If I used to be hungry after school, my mum would fix me up with a bowl whilst I did my homework. When I moved to Canada, nachos moved up a level. Don’t get me wrong, I loved my mum’s plain old ham & cheese topping but the Canadians really brought the goods. Since then, I’ve always gone to town on my nachos and today I want to share it with you. Keep reading for my quick and delicious vegetarian loaded nachos recipe!

Sometimes, nachos have a tendency to leave us with a heavy feeling in our gut and a greasy taste in our mouths. There’s nothing wrong with that, those feelings always pass. But sometimes, I like to eat nachos without those feelings, especially if I’m in the middle of a busy day. This is why I’ve loaded my nachos recipe with fresh salad, homemade guacamole and sour cream to fill you up without holding you down.

Quick and Delicious Vegetarian Loaded Nachos Recipe
Ingredients:
– tortilla style crisps (I love original doritos)
– cheddar cheese
– cherry tomatoes
– baby gem lettuce
– soft and ready to eat avocado
– black pepper
Heat your oven on a low heat setting.
Spread your tortilla crisps on a baking paper lined baking tray. Smother with cheddar cheese (as much or as little as you want). Slice the cherry tomatoes in half and scatter on the baking tray. Pop the tray in the oven for around 5 minutes or until the cheese has melted.
Wash the baby gem lettuce and slice into small strips. Portion as much as you want onto your plate.
Half the avocado and mash up into guacamole. You have the option to finely chop some red onion and mix with the avocado. Season with black pepper.
When the cheese has melted on your tortilla crisps, remove from the oven and add to your plate. Finish with a generous dollop of sour cream.

Loved this! Nachos can feel a bit greasy etc sometimes so I really like the idea of a veggie twist!
